At Ashlar, a warm neighborhood retreat with an elevated twist, diners cozy into a 32-seat dining room and 18-seat cocktail bar with modern Federal styling. Executive Chef Bobby Surdam uses a rustic-meets-fine-dining approach to create enticing menus that feature locally sourced meats and fresh seafood like Rappahannock River oysters, among other delights. The beverage menu emphasizes spirits that give a nod to a bygone era; think rum, madeira, and sherry, as well as an array of local Virginia whiskey, beer, and wine. Named for the “perfect ashlar,” which symbolizes a high degree of mason mastery and strong personal character, our venue pays homage to Alexandria’s freemasonry history and attempts to live up to its name as the modern-day cornerstone of this community.

Meet the Chef

Bobby Surdam, a native of Springfield, Virginia, first set foot in a restaurant kitchen at the age of 17. A graduate of L’Academie de Cuisine in Gaithersburg, MD, he’s no stranger to Mid-Atlantic cuisine. He brings a decade of experience and a familiarity with local ingredients to Ashlar restaurant and bar.

Ashlar pays homage to its Colonial roots in many ways, including when it comes to food and drink (think shrub cocktails and sherry cobbler). When it’s beverage time, you’ll find barrel-aged Manhattans, an extensive rye collection, American classic cocktails, a small selection of cask whiskey, and craft beers, among other tasty offerings.
